Description
This wine is made from old Tempranillo vines. The grapes are destemmed and placed in stainless steel tanks at 24ºC where the fermentation of the grapes takes place respecting their integrity. The grapes are pumped over daily to bring the liquid part into contact with the solid part, favouring the extraction of colour, aromas and tannins, which are important for ageing in barrels. After an extensive period of fermentation, the wine is devatted, separating the wine from the press.
